  10. It’s 3 of green cillies ,slit lengthwise.
  11. You need 1 pinch of asafoetida.
  12. Prepare 1/2 tsp of brown sugar.
  13. You need 10 – 12 of curry leaves.
  14. You need to taste of salt.
  15. You need as needed of dash of lemon juice.
  16. You need as needed of chopped coriander leaves for garnish.
  17. It’s of pickle spices (dry roast until the aroma is released. grind to a slightly coarser than fine powder).
  18. You need 1 tsp of black mustard seeds.
  19. Prepare 1 tsp of cumin seeds.
  20. Prepare 1tsp of fennel seeds.

  24. It’s 4 of dry red chillies.

  26. You need 1/2 tsp of aniseed.
  27. You need 1/2 tsp of whole black pepper.

  1. In a wide bottomed, nonstick pan, heat the mustard oil to smoking point. Turn off and let cool completely..

  3. Place the pan with the cooled mustard oil on medium heat.Add asafoetida and onions.Saute and cook until onions turn brown..
  4. Add curry leaves,ginger paste,garlic paste,green chillies and ground pickle spices.Saute for 5 minutes..
  5. Add mutton and saute on high heat until mutton starts to turn brown..
  6. Turn heat to simmer, add the yogurt-spiced water,cover with a tight fitting lid and cook until mutton is 3/4 done..
  7. Add the chopped tomatoes, mix through,cover and cook until mutton is tender and cooked through..
  8. Remove lid,increase heat to high and cook until all the water has dried up and the desired consistency is reached..
  9. Add a dash of lemon juice..
  10. Remove to a serving dish,garnish with chopped coriander leaves and serve hot along with Indian flatbread..
